Detoxing Root Vegetables Soup - Real Italian Kitchen





Want a creamy potato soup without all the starch? Try this great alternative that uses all the root vegetables that are in season during the winter months.



Rutabaga, turnips, leeks, celery root, they are all rich in minerals, vitamin C, antioxidants and anti-cancer compounds, they also have antimicrobials antibacterial and anti fungal properties!



They help us detox our blood and support heart and blood vessels health. AND they are in season during the dark winter months, when nothing else grows in cold cold Pennsylvania! Because my husband still eats meat (I still eat it, but don't mind a vegan meal once in a while...), I toasted some spicy sausage crumbles to pour on top of the soup instead of croutons. Yummy. I almost wanted to try it...
