Panini Italian Style


The basis of a Panino is a choice of meet + a choice of cheese. The most popular cheese in Italy is fresh mozzarella, although in the north Fontina is also widely used (it looks like american cheese).

For today's lunch I chose two very simple but delicious combination.

-Prosciutto Cotto e Mozzarella (Ham and mozzarella)
-Pomodoro, Mozzarella e Basilico (Tomatoes, mozzarella and basil


SOME TIPS...
I hope I don't need to teach anyone how to make a sandwich, but here are some tips that might make your panino even better:

1. Cut your roll in half down the middle and slightly toast it. Pour a little bit of extra virgin olive oil inside instead of using mayo.









2. Cut the mozzarella in medium size slices, try to get the tomatoes to be the same size.











3. If you feel like going the extra mile, for the ham sandwich let the mozzarella melt a little in the toaster oven. Don't do it with the fresh tomatoes. There's nothing I hate more then lukewarm tomatoes.


4. Season the Tomatoes and Mozzarella one with olive oil and salt, it really doesn't need anything else if you're using fresh ingredients!

Eggplant Parmesan - Melanzane alla Parmigiana - Real Recipe

Eggplant Parmesan - Melanzane alla Parmigiana

Here's a video recipe on how to make the most creamy, delicious Melanzane alla Parmigiana you've ever tasted!


Ingredients for one medium sized pyrex:


One large fresh eggplant
Two mozzarella balls
Half a jar of your homemade tomato sauce (you can buy it at the store if you want, at your own risk)
1 cup grated parmigiano cheese (or more if you like it parmigiano heavy)
Salt
Vegetable oil for frying

Utensils:


A medium Pyrex (doens't matter if round or squared)
A non sticky frying pan
Wooden utensils
