Meal Substitution: Detoxing Beet and Cranberry Juice


Wonderful breakfast substitution, made using seasonal fall vegetables.

Ingredients for one person:
1 large red beet
1 large apple (choose a juicy one, mine was a Honey Crisp)
a handful of fresh kale
4 carrots (mine were small)
3/4 cup of cranberries
1/4 cup orange juice or 1 fresh orange (it's not in season where I live so I used juice).

1. I started with putting through the juicer the beet and the carrots, followed by half of the apple. I find that alternating "dry" vegetables with juicy fruit gets the most out of the "dry" ones. 

2. Next up the Kale: put a little kale through and some of the Cranberries. Why? Because if you like to keep the motor running like me, the Cranberries will shoot in every direction unless there's something under to "cushion" the fall...! Repeat till you're out of Cranberries. 

3. Finally add the rest of the Apple, the Orange or the Orange Juice. 
4. Give it a good stir and then go clean the utensils you used before everything gets permanent hot pink strikes from the beet. Beet juice is a powerful colorant, I'm not joking, go clean the kitchen.
